This is the deepest principle of the Melcharts, who still make traditional pasta in their family business.

Mother Earth provides us with healthy and valuable raw materials. The more carefully and lovingly we deal with them, the more valuable our pasta becomes. According to this conviction we have been working for more than 30 years. The grain is processed with the utmost care and loving devotion to obtain valuable pasta on both a nutritional and subtle level.

The grain comes from controlled organic cultivation and is purchased from Austrian organic farmers and natural mills, regionally if possible. We take care to use only high-quality and germinable grain of original varieties. We rely on internationally recognized inspection organizations such as "Ernte" and "Demeter".
 

The grain is freshly ground just before processing so that as many vital substances as possible are retained.
 

The pasta machine used for production is water-cooled, works gently and with little pressure. This prevents the dough from heating up and destroying vital substances. The freshly produced noodles are hand-laid on natural wooden carriers and are thus optimally prepared for the drying of the cell nuclei.


Drying takes place, as in grandmother's times, by air-drying the pasta at normal room temperature for 3 to 9 days. After drying, the pasta is carefully and lovingly hand-packed in packaging that is as environmentally friendly as possible.
 

This careful processing results in high-quality, tasty noodles in which the entire variety of vitamins, minerals, trace elements and secondary plant substances are retained.

How did the idea of ​​specializing in the production of organic pasta come about?

At the end of the 1970s, for health reasons, Gustav Melchart had to change his diet to a wholefood diet rich in vital substances. The entire family supported Gustav and the success of this change was soon felt by everyone else. We quickly realized that many people are struggling with similar problems. That was the birth of the idea to specialize in the production of tasty, healthy, valuable, nutritious, and organic whole grain pasta.
